Kaui Philpotts has written a very personal guide to vintage local cooking with "Hawaiian Country Tables," a nostalgic collection of dishes form the days before statehood.
Recipes include Shrimp Scampi from the old Canlis restaurant, a champagne punch passed down from the days of Kalakaua, Guava Cake from the Willows and more.
The author's reflections on these dishes are included, as well as cultural notes on such topics as Hawaiian Quilts.
